I've always figured that stuff was after Joshua's death occured. Losing his wife in any way, must have been painful, but with Joshua, he was able to remain sane. Then he lost Joshua too. Kinda makes me think of Harry and James from Silent Hill, both of whom lost their wives. Harry-who was ironically also a writer>_>-had his daughter Cheryl, whom was the light of his life and kept him sane. James on the other hand, was left with no one, and he ended up going a little insane.
The storybooks, from what we hear in the unused dialogue and from the ones Jen's memories produced-were hardly ideal, and the ending implies that even when he was sane, Gregory could not write happy stories no matter how hard he tried or wished to. I believe he wrote them to keep his son happy, as they only had so much money.

After Joshua died, a deep feeling of nothing must've overwhelmed him

Living in the middle of nowhere probably did not help matters either. He was really left completely and utterly alone.
